A while back, we asked ourselves, "What pairs well with ripe fruit?" The answer we gave? "Rum." So, we picked up a few American oak rum barrels from a local distillery and began testing. This is the third run we have done in 2015; this time we used a naturally processed, Ethiopian lot from the Nefas Estate. On its own, it has all the sugary deliciousness of ripe, Bing cherries. Having rested varying amounts of Nefas at different lengths of time roasting and cupping along the way, we discovered all the right parameters for a deliciously sweet, rum-infused flavor.

The nose is heady and complex. The acidity is mellow and balanced by the richness and complexity of natural flavors: like a ripe pineapple couples with a melange of cherry cultivars. The body is liqueur-like, and the finish is a deep, rum-soaked, dark chocolate and fruit medley. This coffee makes an incredibly unique cup that won't be around for long. Get it and enjoy it!
