It is hard not to love the sugary sweetness of a cleanly processed natural. This Ethiopian lot from the Gelana Abaya area has, in particular, rich, tropical fruit notes. "What pairs better with tropical fruits than rum?", we thought. So, we picked up a few American oak rum barrels from a local distillery and began testing. We rested varying amounts of Gelana at different lengths of time roasting and cupping along the way. Sure enough, when all the right parameters came together, we got a deliciously sweet, rum-infused flavor.

The nose is heady and complex. The acidity is intense, yet balanced by the richness and complexity of flavor: like a ripe pineapple. The body is liqueur-like, and the finish is a deep, rum-soaked, tropical fruit medley. This coffee makes an incredibly unique cup that won't be around for long. Get it and enjoy it!
