This special lot is a blend of peaberries, created by Rayyan Mill after extensively cupping in the lab.  Coffee peaberries are a much welcomed mutation in the coffee cherry!

The image shown above is a traditional method of water collection and storage for irrigation.  The following image shows how rain water is maximized by a traditional irrigation method. Water flowing into the valley is controlled through a series of hand-laid rock channels ultimately directly the water to the coffee trees.

Drought, war, and lack of transparency characterize Yemeni coffee; as a result, Yemeni coffees rarely leave the country in pristine condition. Rayyan Mill, in Sanaa, however, turns these processes on their head. They select only the best coffees from Yemeni farming communities they're developing relationships with. Each coffee arrives at the mill immediately after harvest, where it undergoes carefully processing, is stored in grain pro, and constantly checked for quality.

This is a blend of coffees processed at Rayyan Mill. The top lots were culled of peaberries, a naturally occurring mutation famous for above-average quality. This lot has notes of lavender, brandy, and aromatic wood. Make sure to let it rest a minimum of two weeks before trying! A week of rest for one of these Yemeni coffees is equivalent to a day for a normal coffee.
